Apple Streusel Muffins

This is my absolute favorite thing to make with Granny Smith (or any other) apples that are hanging around. They're light and flavorful, with lots of apple and delicious streusel. They make a great breakfast, snack, with a thin spread of butter or dessert with ice cream and caramel sauce.


Ingredients:


For the topping:

1/2 cup all purpose Flour

1/4 cup light Brown Sugar

1/4 cup Sugar

1 tsp Cinnamon

3 TBS Butter


For the muffins:

2 cups Flour

1 1/2 tsp Baking Powder

1 1/2 tsp Cinnamon

1/2 tsp Salt


1/2 cup Butter @ room temp

1/2 cup packed Brown Sugar

1/2 cup Sugar

2 Large Eggs

1 tsp Vanilla

1/2 cup Whole Milk

1 1/2 cups diced peeled Apples


Instructions:

  1. Preheat oven to 400 & spray muffin pan with cooking spray

  2. Make the topping

  3. Mix the 1st 4 muffin ingredients

  4. Toss apples with 2 TBS flour mixture

  5. Cream Butter & Sugars

  6. Add eggs 1 at a time, scraping bowl

  7. Beat in vanilla

  8. With mixer on low, add 1/2 flour mixture and 1/2 the milk

  9. Continue until all flour & milk is mixed in

  10. Fold in the Apples

  11. Divide batter in muffin pan, about 1/3 cup per muffin

  12. Sprinkle topping evenly, about 2 TBS per muffin

  13. Bake 10 mins, then reduce oven to 350 and bake 5-10 more minutes. Muffins will be a light golden and a little soft in the center until they cool
